Lamb Shoulder


Our lamb is farmed in a way that respects the ancient forest environment in which the farm finds itself.

The Southdown Romney Cross sheep are raised traditionally and non-intensively on the permanent pastures within the which make them ideally suited to slow maturity. The sheep feed on grass all year around during the winter months they live off hay that the farm.

Aside from the farming practices the meat is also butchered on the farm meaning we have complete transparency over this process too.

Our Lamb Shoulder is a well-exercised, flavorful cut from the animal’s forequarter that is rich in marbling and connective tissue, making it ideal for slow-cooked dishes such as roasts, stews, and curries.
