The Peasant Harissa Paste


2 onions chopped (red or white),

6 garlic cloves peeled,

2 red tomatoes chopped

6 chilis chopped,

2 peppers deseeded and chopped, Olive oil

Salt and pepper for seasoning, 2tbsp of honey, 50ml of water


Mix all of the chopped ingredients in a bowl and lightly oil and season with salt and pepper. Roast in the oven at 180c for 25mins. Add the honey and roast for another 5mins. Add the water to deglaze all the wonderful caramelized flavour from the roasting dish. Place all in a blender and pulse until you get a paste.

Great as a marinade or brush on meat or veggies before cooking
