1kg of apples, peeled and diced

375g of Muscovado sugar

2 onions finely diced

1 bay leaf

1 star anise

1 chilli, deseeded and sliced

1 Garlic clove, crushed

1tsp of salt

350ml of apple cider vinegar


Combine all the ingredients in a large, heavy saucepan. Bring the mixture to a boil over a medium heat, then simmer uncovered, stirring frequently for 30-40 mins, or until thick and pulpy. Remove from the heat, leave to cool and transfer to sterilised, clean, dry jars and seal.

The great thing with this recipe is you can change apples for other fruits and the recipe will work, Cooking time may change slightly but the result with be just as delicious!

This one though is great with cheese and roast pork!
