A delicious Brunch recipe from one of lovely customers

Serves 2

Poached eggs with charred purple sprouting broccoli, roasted vine tomatoes, labneh

On a Mamoosh wholemeal pitta


100g of lightly blanched purple sprouting

150g cherry vine tomatoes, lightly roasted

2 large freerange eggs

2 wholemeal Mamoosh pittas

Shmear of labneh

Pinch of chilli flakes (optional)

Drizzle of extra virgin rapeseed oil



Pan of water on for the poached eggs,

to char the purple sprouting broccoli, get a frying pan nice and hot, throw in the lightly blanched purple sprouting and don’t move the pan, lightly season with salt and pepper, after a couple of minutes turn the purple sprouting to char the other side, while this side chars, toast the pitta and poach your eggs,

to plate, shmear the labneh on the toasted pitta, charred purple sprouting on first, then the cherry vine tomatoes topped with a poached egg, pinch of chilli flakes, salt and pepper and a drizzle of the oil, Delicious!
