Ingredients
1 Red cabbage, finely sliced
1 onion, sliced
70g of soft light brown sugar
70ml of apple cider vinegar
1 large Bramley apple, peeled and sliced
50ml of apple juice
100ml of red wine
A large knob of butter
Method
Place the sliced cabbage, onion, brown sugar, vinegar, apple juice, wine and butter in a large pan, season well and bring to a simmer, then cover with a lid and lower the heat and cook for 1 hour, after an hour remove the lid and cook for another 30mins until tender and half of the liquid has gone.
